The 2022 Second Harvest Hero Sweepstakes, presented by Moneris, has officially come to a close, but before we go, we want to say: Thank you for making this campaign a success!

Because of your support, we were able to sell 29,900 tickets across 202 communities in Canada, amounting to $97,030 raised for Canadians in need!

These funds will help us provide 231,024 meals for people experiencing hunger from coast to coast to coast, as well as help us divert 868,714 pounds of greenhouse gas emissions from the atmosphere.

We are beyond grateful for your participation in the Hero Sweepstakes, and so are the communities and agencies that we serve.

Chili Pineapple & Shrimp Mixed Grill, by Chef Roger Mooking

Spring is upon us, barbeques are out of hibernation and the grill is on! For those who enjoy the warmth of the sun and the sizzling of a nearby BBQ, along with the challenge of mastering a grill recipe, read on. Celebrity chef Roger Mooking presented this scrumptious take on a shrimp mixed grill recipe in the 2018 Toronto Taste cookbook.

Ingredients

  • 12 Jumbo Shrimp (16/20 size), peeled, tail-on (about 12 oz)
  • 1 Tsp finely chopped Garlic
  • 1 Tsp finely chopped Shallot
  • 1 Tsp fresh Lemon Zest
  • 1/2 Tsp Ground Coriander
  • 1 Tbsp Olive Oil
  • 1/2 cored Pineapple, sliced into 6 spears
  • 2 Tbsp store bought Chili Oil
  • 1/4 Tsp Kosher Salt
  • 1/4 C Coconut Milk
  • 1 Tsp Honey
  • Fresh Mint Leaves, for garnish
  • Fresh Basil Leaves, for garnish

Instructions

  1. Preheat BBQ to medium high heat.
  2. Pat shrimp dry and place in a medium bowl. Add garlic, shallot, lemon zest, ground coriander, pinch of kosher salt and olive oil, and very gently toss to combine. Let stand for at least 15 minutes, refrigerated, to marinate. Using a pair of metal skewers, thread shrimp on both tail and “head” side, leaving about half inch of space in between each shrimp. You will end up with a total of two sets of skewered shrimp (6 per pair of skewers).
  3. Place pineapple spears on a large plate and drizzle over chili oil. Gently flip the spears around to thinly and evenly coat the pineapple all over with the oil.
  4. Place the seasoned pineapple spears directly on the grill, cooking about 3-4 minutes per side (without moving the spears too much) to get nicely caramelized grill marks. Transfer to a large serving platter and finish seasoning with a touch of salt.
  5. Place skewered shrimp onto grill and cook over direct heat until they appear pink and just firm at the thickest part, about 2-3 minutes per side (they will continue to cook slightly as they cool, so try not to leave them on the grill too long!). Remove from heat and carefully remove shrimp from hot skewers. Arrange shrimp over the grilled pineapple.
  6. In a small bowl, mix the coconut milk and honey until the honey is fully dissolved into coconut milk. Drizzle the mixture over and around the shrimp and pineapple.
  7. Garnish with fresh mint and basil leaves and serve right away.

Kale & Sweet Potato Curry

Kale & Sweet Potato Curry

The Community Share Food Bank provides fresh and non-perishable food to more than 150 families a week in the Don Mills area of North York, Ontario. The volunteer-run organization works in cooperation with community members, churches and local service organizations. This month we are featuring this inexpensive and easy to make Kale and Sweet Potato Curry.

INGREDIENTS

  • 1 1/2 tbsp vegetable oil
  • 1 large shallot, minced
  • 2 tbsp fresh ginger, minced
  • 2 tbsp garlic, minced
  • 1 red pepper, sliced lengthwise
  • 3 tbsp red curry paste
  • 1 large sweet potato, peeled and medium diced
  • 1 cup canned chickpeas
  • 2 (14 oz) cans coconut milk
  • 2 tbsp maple syrup (optional)
  • 1 1/2 tsp turmeric, ground
  • Salt to taste
  • 2 cups kale, chopped

PREPARATION

  1. In a large pot over medium heat, sauté shallot, ginger, garlic and red pepper in oil. Saute until tender, stirring frequently, about 2 minutes.
  2. Add red curry paste and stir. Add sweet potatoes and chickpeas and cook for 2 minutes.
  3. Whisk in coconut milk, maple syrup (optional) and turmeric. Season with salt to taste. Bring to a simmer over medium heat and cook for 5 to 10 minutes, stirring occasionally.
  4. Once sweet potatoes have softened, add kale. Simmer until kale is tender, about 3-4 minutes.

Tip: Serve over brown rice. Add lemon or lime wedges and sprinkle with fresh cilantro.
