EGGPLANT PIZZA // Serves 8
INGREDIENTS
2 eggplants, sliced lengthwise into thirds
1 cup tomato sauce
1 tsp salt
1 tsp black pepper, ground
1/2 cup shredded mozzarella cheese
Optional: use pita or another flatbread as base for the eggplant pizza.
PREPARATION
- Preheat oven to 375°F.
- Place eggplant on a lightly oiled baking tray.
- In a separate bowl, mix tomato sauce, salt, and black pepper.
- Scoop 2 spoonful’s of sauce on top of eggplant and cover with aluminum foil. Bake for 15 minutes.
- Remove foil and top with cheese. Bake for 3 to 5 more minutes.

Believe to Achieve is an organization that serves children from 6 to 12-years-old in an after-school program and children 13 and above in a youth program. Believe to Achieve has many programs that benefit the Black Creek community, such as women’s fit camp and a junior chef program, both of which teach participants about healthy life choices.
